Teri's Chicken Pot Pie

  • 1/3 cup margarine
  • 1/3 cup flour
  • 1/3 cup onion (or 2 Tblsp dried onion)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cup chicken broth
  • 2/3 cup milk
  • 2 1/3- 3 cups cooked chicken, shredded
  • 1 package (10 oz) frozen mixed vegetables
In saucepan, melt margarine. Stir in flour, onion, salt, and pepper. Cook, stirring constantly until bubbly. Remove from heat. Stir in chicken broth and milk. Stir constantly until it boils then boil for one minute. Stir in chicken and frozen vegetables. Put in pie shell. Cook for 35 minutes at 425 degrees.
