Mountain Man Breakfast

  • 32 oz Bag Shredded Hash Browns
  • Optional if desired 1/2 lb Bacon cut in 1” pieces (we like the pre-cooked stuff from Costco)
  • 2 pkgs pork sausage (Jimmy Dean - regular or spicy as desired)
  • 1 Medium Onion, chopped to small pieces
  • 1 1/2 lb Shredded Cheese (mexican blend or cheddar, as desired)
  • 12 Eggs
  • 1 Stick Butter
  • Salt & Pepper, or garlic salt if desired
  • Salsa or Ketchup as desired
  • Tortillas if making breakfast burritos
Cook in a 12" Dutch oven, using 14 top and 10 bottom briquets. 

Preheat Dutch oven over bottom briquets until hot. (If I have a camp chef stove, I do the browning on it.) Cook chopped onion in Dutch Oven until clear.  Add uncooked bacon (if using) and sausage and brown together with onion. (If using precooked bacon, then add it later.) Remove bacon, sausage, and onion from oven and drain on paper towel. Brown hash browns with butter (in hot Dutch oven or better yet on a griddle if you have one). Add salt, pepper, or garlic salt if desired to taste. When hash browns are done, add the bacon, sausage, and onion. Stir together.
 
In separate mixing bowl, beat eggs thoroughly. Pour eggs over mixture over the other ingredients already in the Dutch oven. Cover with hot lid and cook until eggs are almost solid. Sprinkle with shredded cheese. Continue cooking until eggs set and cheese melts.

Serve with ketchup or salsa as desired. If making breakfast burritos, warm tortillas and place a small amount of mixture in tortillas. Top with salsa as desired, roll into burrito.
