Cookies:
2 Boxes Chocolate Cake Mix
4 Eggs
2/3 Cups Oil
1-2 Tbsp. Four
1. Preheat oven to 350* F.
2. In a large bowl, add cake mix, oil, and eggs. Mix until ingredients are completely combined. your mixture will be a little sticky.
3. Add in 1 Tbsp of flour and stir. If the dough is still sticky, add in another 1 Tbsp of flour. You should be able to roll the mixture into balls.
4. Using clean hands, roll the mixture into evenly sized balls. (Remember, they have to be near the same size so they can fit together.)
5. Place on a GREASED cookie sheet with about 1-2 inches of space around each one. Bake for 8 minutes at 350* F. When the tops of the cookies start to crack, take them out. Do not overbake the cookies or they will be very crispy and hard.
6. Leave the cookies to cool on the cookies sheet for 3-5 minutes. After they cool, move them to a cooling rack to cool completely.
7. As soon as the cookies are completely cooled, frost one cookie with cream cheese frosting. Place another cookie on top of the frosted cookie and enjoy!
Cream Cheese Frosting:
1/4 cups Margarine
1/2 pkg. (4 oz) cream cheese, softened
2 Cups powdered sugar
1 tsp. vanilla
In a medium bowl, add softened cream cheese and margarine. Beat until creamy. Add vanilla and blend until combined. Slowly add powdered sugar, 1 c. at a time, until creamy and completely combined.
