Moink Balls
Ingredients:
3 lb. ground beef
1 cup garlic bread crumbs (or regular bread crumbs plus some garlic powder)
3 eggs
40 slices bacon (classic cut, not thick)
Plowboys Yardbird Rub
Plowboys Sweet 180 BBQ Sauce
ChiliDawg's Razbanero Spread
Instructions:
Preheat smoker to 375 degrees. To add additional smoke flavor, fill a smoke tube with your favorite pellets, light with a torch, and place on the cooking grate off to the side.
Combine ground beef, bread crumbs, and eggs. Mix well by hand. Form the meat mixture into 1/2 - 3/4 ounce balls. Season the meatballs with Plowboys Yardbird Rub. Wrap 1/3 - 1/2 slice bacon around each meatball and secure with a toothpick.
Place meatballs on the grill. While cooking, combine two parts BBQ Sauce with one part Razbanero Spread. Whisk to combine (may need to microwave so soften it up). When the moink balls reach an internal temperature of 140 degrees, dip them in the BBQ sauce mixture and return them to the grate. Continue cooking until the internal temperature reaches 165 degrees. Total cooking time is 30-45 minutes. (If you want to cook them slower, just lower the temperature of the smoker.) Serve warm.
